This white chicken chili recipe is so easy and so delicious. It will warm you heart and soul...and the best part is, you can have it on the table in about 30 minutes! It is wonderful comfort food that you can enjoy any time of year but it is especially nice on cold winter nights.
Here's what you are going to need:
1 pound of cooked chicken, cubed (about 3 cups)
2 cans of Lucks Southern Style Great Northern Beans
1 can of diced tomatoes (if you want a bite to your chili, use a can of Rotel diced tomatoes with Green chilies)
1 can of Cream of Chicken Soup
1 envelope Lipton Onion Soup Mix
2 cups of water
1 Tablespoon Chili powder
Top with shredded cheese and green onions if desired
Here's what you need to do:
In a large dutch oven, combine the cooked chicken, Great Northern Beans, diced tomatoes, Cream of Chicken Soup, Onion Soup mix, water and Chili powder. Bring to a boil, stirring occasionally. Reduce heat, cover and simmer 20 to 30 minutes, stirring occasionally so it doesn't stick to the bottom of the pot.
This is great served warm with some hot out of the oven cornbread or cornbread muffins!

You could even use canned chicken in this recipe if you want. This is a wonderful meal for those cold winter nights and you can keep everything on hand right in your pantry!
