Do you need dinner ideas? I don't know about you but I get tired of making the same thing night after night so I'm gonna try to make something different every night. Sometimes it may just be making something using the leftovers from the night before and other nights it might be somethin' totally different.

I love when the weather gets warm enough to get out the grill. Tonight I made Grilled Cornish Hens, dirty rice (you can find the recipe in my ecookbook) and grilled asparagus.
Here's a meal a bit on the lighter side. Oven Fried Cod Fish, with an easy rice. I put a cup of white rice in a saucepan, added a can of chicken broth, brought it to a boil, reduced to a simmer and covered and simmered until the all of the liquid was absorbed (about 20 minutes). I then added a can of Chicken with rice soup and mixed well. Added a side of peas for a complete, satisfying meal!
I love soup and sandwiches when I'm want something a little different for dinner. I made chicken salad sandwiches to go with some tomato basil soup.
Grilled Teriyaki wings with macaroni and cheese and steamed broccoli is a dinner everyone will love!
This Melt-in-your-mouth Salisbury Steak (you can find the recipe in my ecookbook), mashed potatoes and roasted Brussels sprouts is a wonderful supper idea on a crisp fall day!

It has a wonderful sauce and the chicken turns out moist and tender every time! I served it with mashed potatoes and fresh green beans that I sauteed in butter, onions and a little salt and pepper.
So, how about this marinated then grilled salmon, with baked potatoes and a salad.
I used my pressure cooker to make this wonderful Pot Roast but you can certainly use a slow cooker or even cook it on top of the stove. I served this with cornbread to sop up all of that wonderful gravy!

Need quick dinner ideas? I just picked up some bread dough from the bakery at the local grocery store and got out the grill! I topped this grilled pizza with some canadian bacon, mozzarella cheese, green peppers, onions, mushrooms, black olives and cherry tomatoes. I partially cooked the peppers, onions and mushrooms in a saute pan on the stove before topping the pizza. This meal literally takes just a few minutes to cook so be sure to have you toppings ready and standing by.
I started out to make a light dinner of a Baked Potato and a Chef Salad. The problem was, I kept adding things to the salad. I started out with romaine lettuce, purple cabbage, carrots, green peppers, celery and tomatoes and then added grilled chicken, bacon, boiled eggs, a blend of cheeses, croutons...oh well...my intentions were good.
This meal may take a little time to make but in the end, it's well worth the effort. Smothered Pork Chops with mashed potatoes (I used unpeeled red skin potatoes), greens, pinto beans(the recipe is in my ecookbook) and Cornbread muffins.
You've heard of beer can chicken...how about Root beer can chicken? This turned out very moist and delicious! I served it with parsley potatoes (you can find the recipe in my ecookbook)and green beans.
How about hamburgers cooked on the grill? I added some Heinz 57 steak sauce, Worcestershire sauce, an egg, a couple of tablespoons of bread crumbs, garlic powder, salt and pepper to the ground beef and then formed it into patties and grilled. With it I made hashbrown casserole and corn on the cob.
Rib Eye Steak with southern potato salad on a bed of Romaine Lettuce with cherry tomatoes and mushrooms sauteed in butter!
Why not make individual Chicken Cornbread Casseroles (the recipe is in my ecookbook)! I served these with a mess 'o greens and cornbread!
I took my meatloaf recipe, formed it into a loaf and placed it on a piece of heavy duty aluminum foil. I put it on the grill and grilled it until it reached an internal temperature of 160 degrees F which took about 1 1/2 hours. I put the tomato topping on after an hour. With it I made mashed potatoes with a beefy mushroom gravy and broccoli. It turned out really good!
Here's a great dinner idea....how about breakfast for dinner! How about an omelet! For this one, I sauteed some fresh mushrooms in a little butter with a some diced onion. Once the onions were soft, I added some fresh spinach and cooked it just long enough to wilt the spinach. I stuffed the omelet with the spinach mixture along with some bacon that had been cooked crisp and some Monterrey Jack cheese. I served it with hashbrowns and some fresh tomatoes out of the garden. It really hit the spot!
This is an oven fried chicken recipe using ranch dressing mix. I served it with Noodles and Broccoli and a side salad. An easy dinner with a lot of flavor!
This is one of those 30 minute meals. Homemade Sloppy Joes with buffalo potato wedges (you'll find the recipe in my ecookbook) and a tossed salad.
I don't know about you but sometimes, I just get a hankerin' for vegetables. Sometimes we just have vegetable plates for dinner. Here, we had pinto beans (the recipe is in my ecookbook), hash brown casserole, a mess o' greens, fried okra, corn on the, sliced tomatoes straight from the garden and, of course, cornbread. It really hit the spot!
Tonight was Barbeque Shrimp over white rice, and baby Lima beans that I seasoned with a little bacon drippings.
Looking for quick dinner ideas? I made this easy hamburger stroganoff in less than 30 minutes and everyone was raving about how great it was. I served it with peas for a quick dinner.
I used penne pasta in place of spaghetti for something a little different. I served it with a side salad and some Sister Shubert Rolls (you can get them in the freezer section of the grocery store)
