You're gonna love this strawberry pie recipe! If you've never had a strawberry pie, you don't know what you're missing. If you have had a strawberry pie, you've probably never had one this good!
Ingredients
For the Filling:
2 pounds frozen strawberries
2 tablespoons lemon juice
2 tablespoons water
1 tablespoon unflavored gelatin
1 cup sugar
Pinch salt
1 pound fresh strawberries, hulled and sliced thin
For the Topping:
4 ounces cream cheese, softened
3 tablespoons sugar
1/2 teaspoon vanilla extract
1 cup heavy cream
For this strawberry pie recipe you will also need:
1 (9-inch) single crust pie shell (I used my Flaky Pie Crust recipe and made 2 pies)
Method:
Poke a bunch of holes in your pie crust.
Bake at 400° F for 20 minutes. Remove from oven and cool completely. Set aside.
Cook the 2 pounds of the frozen berries over medium-low heat...
...until the berries start to give up their juices, about 3 minutes.
Increase to medium-high heat and cook, stirring frequently about 25 minutes until the mixture has thickened and resembles jam.
Measure to make sure it is exactly 2 cups. Since it's a little more than 2 cups, I'm gonna put it back in the pot and cook it a little longer so the pie won't be soupy.
There...that's better.
Pour the strawberries back into the pot, remove from heat and set aside.
In a small bowl combine the lemon juice and water.
Add the Gelatin.
Let stand about 5 minutes until gelatin is soft and it begins to thicken.
Thinly slice the fresh strawberries. Set aside.
Into the pot with the cooked strawberries, stir in the gelatin, sugar and salt mixture.
Mix well.
Return to heat. Bring to a simmer and cook about 2 minutes. Remove from heat and allow to cool to room temperature.
Fold the fresh strawberries into the filling.
Pour into a pre-baked pie shell. Refrigerate at least 4 hours until set before serving.
To make the topping, beat together the cream cheese, sugar and vanilla on medium speed until smooth, about 30 seconds. Add the heavy cream and continue beating until stiff peaks form, about 2 minutes. Serve sliced pie with whipped topping.
