I really think you are going to enjoy this recipe for Italian Chicken!
I wanted to do something a little with chicken one day so I used ingredients that I had on hand and this is what I came up with. I really don't know what it should be called but it turned out pretty darn good!
Sometimes pictures explain things a lot better than I can so with this recipe, I'll show you the step-by-step pictures that I took while making this recipe.
3 pounds of boneless skinless chicken breast
4 ounces of cream cheese
1/2 cup of mozzarella cheese
1/2 cup of Parmesan cheese
8 ounces of frozen spinach, thawed and all of the water squeezed out.
1/2 teaspoon of kosher salt
1/2 teaspoon of pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 teaspoon of Italian seasoning
2 eggs, slightly beaten
1 cup of Italian bread crumbs
peanut oil for frying
1 pound of egg noodles, cooked and drained
1 jar of spaghetti sauce (The only jarred spaghetti sauce I use is Prego three cheese)
In a medium bowl, combine the cream cheese, mozzarella cheese, Parmesan cheese, salt, pepper, onion powder, garlic powder and Italian seasoning. Add the spinach and mix well.
This is what it should look like:
Place each chicken breast between two pieces of plastic wrap and pound until it's thin:
Remove the plastic wrap and fill with desired amount of filling:
Carefully roll each chicken breast up:
Coat each chicken roll in the egg mixture and then coat with the bread crumbs:
Fry in hot peanut oil, turning to brown all sides. Remove from oil to cookie sheet. Bake in a 350 degree oven foe 20 to 25 minutes until chicken is cooked through.
Allow chicken rolls to rest for about 5 minutes. Slice and serve on top of egg noodles covered with spaghetti sauce.
Mama hopes you enjoy this stuffed chicken breast recipe!
