Make Mama's Recipe for breakfast casserole the night before and pop it in the oven the next morning.
Recipes aren't set in stone so don't be afraid to experiment. You're not limited by the ingredients listed in the recipe. If you have an ingredient that's not listed and you think it would be good, by all means give it a try.
For a basic egg casserole:
8 eggs
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
8 slices of potato bread, crust removed
Add one or a combination of these extras
2 cups of colby-jack cheese
1 cup of diced ham
1 pound of bacon, cooked crisp and crumbled
1 pound of sausage, browned and drained.
1 cup of broccoli, steamed
1/2 cup of green or red pepper, sauted in butter
1 can (4-ounce) mushrooms, drained and sauteed in butter
1/4 cup diced spring onion
1 tablespoon of chives
Here's what you'll need to do:
Preheat oven to 350 degrees F.
In a bowl, combine the eggs, sour cream, salt and pepper. Mix well.
Spray a two quart casserole dish with non-stick cooking spray. Line the bottom with 4 slices of the potato bread, cut to fill the bottom.
Layer with half of the ingredients of you choice. Pour half of the egg mixture over the top.
Cut the other 4 slices of potato bread into cubes and put on top of the egg mixture.
Repeat with a layer of the other half of the ingredients of your choice and another layer of the egg mixture.
Refrigerate overnight or for at least 5 hours.
Bake at 350 degrees F for 1 hour.
