This simple recipe for Au Gratin Potatoes is great with any meal.
Add some diced ham, cooked and crumbled bacon and even some green beans if you want and make these delicious potatoes into a one dish meal!
Here's what you are going to need:
4 large russet potatoes
3 tablespoons of butter
3 tablespoons of all-purpose flour
1/2 teaspoon of salt
1/2 teaspoon of pepper
2 cups of milk
2 cups of shredded Mexican Cheese (consists of 4 cheeses - Cheddar, Asadero, Queso Quesadilla and Monterrey Jack Cheeses), or you can use 2 cups of shredded cheddar cheese.
Here's what you need to do
Preheat oven to 400 degrees F.
Butter the bottom and sides of a two quart shallow baking dish. Set aside.
Melt the butter in a medium saucepan over medium heat.
Add the flour and salt.
Bring to a boil and cook, stirring constantly for one minute.
Gradually add the milk and then add the pepper. Stirring occasionally until mixture thickens and boils. Boil an stir one minute.
Add 1 1/2 cups of the cheese.
Stir until the cheese is melted. Set aside.
Peel and slice the potatoes into 1/8 inch slices. This can be done by hand or you can use a mandolin slicer like the one above.
Layer 1/2 of the potatoes into the bottom of the casserole dish.
Top with 1/2 of the cheese sauce. Top with the other half of the potatoes. Top that with the other half of the cheese sauce.
Place the casserole on a shallow baking dish that has been lined with tin foil so that it will catch anything that spills over.
Cover the casserole with tin foil and bake for 1 1/2 hours.
Uncover and sprinkle with the remaining cheese. Return to oven and bake an additional 15 to 20 minutes or until the cheese melts and begins to brown.
