This cinnamon raisin bread recipe makes the some of the most wonderful bread you'll ever have! It's great plain, toasted or you can even add a glaze of cream cheese frosting.....YUM!
Here's what you are going to need:
1 1/2 cups + 2 Tbsp warm milk (105°- 115° F)
2 tablespoons butter, softened
4 cups bread flour
3 Tablespoons packed brown sugar
1 teaspoon salt
2 teaspoons active dry yeast
2 Tablespoon Vital Wheat Gluten (optional, but it gives the bread a better rise and shortens the second rise time)
1 cup raisins, plumped in hot water
2 Tablespoons butter, softened
2 Tablespoons brown sugar
3 teaspoons ground cinnamon
1 Tablespoon butter, melted
*Makes 2 one pound loaves.
Here's what you need to do:
Place warm milk, 2 Tablespoons of softened butter, flour, 3 Tablespoons of packed brown sugar, salt, yeast and Vital Wheat Gluten in the pan of the bread machine in the order recommended by the manufacturer. Select the dough cycle. Check after about 5 minutes. If the dough is sticking to the sides of the pan, add a little more bread flour until it pulls away from the sides. If the dough is too dry, add a very small amount of milk.
If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished.
When the dough cycle has finished, turn the dough out onto a lightly floured surface. Divide the dough in half. Roll one half of the dough into a rectangle.
Spread with 1/2 of the butter.
Sprinkle with 1/2 of the brown sugar, and cinnamon.
Beginning at the narrow end, roll the dough up tightly.
Tuck the ends under the roll.
Place into a lightly greased 8.5 x 4.5 inch bread pan seem side down. Repeat with the other half of the dough.
Cover and let rise in a warm place until doubled in size, about 30 minutes to an hour.
Preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven for 30 to 40 minutes, until crust is brown and loaves sound hollow when tapped.
Brush the tops of the finished loaves with melted butter.
**Check the loaves after about 20 minutes, if the crust looks like it's browning too quickly for your liking, lay a piece of aluminum foil over the tops of the loaves, shiny side up and finish baking.
