This tropical Fruit and Nut bread is amazing!
I had some over-ripe bananas that needed to be used And I wanted to make something a little different besides the usual so I looked through my pantry and saw I had some coconut, pineapple and maraschino cherries I could use so I came up with this wonderfully different bread.
Here's what you are going to need:
3 cups of self-rising flour
1 cup of granulated sugar
1 cup of light brown sugar, packed
1 teaspoon of cinnamon
3 eggs
1 cup of butter, melted
2 cups of mashed, over-ripe bananas
1 (8-ounce) can crushed pineapple, drained
1 cup of flaked coconut
1 cup of maraschino cherries, chopped
1/2 cup of applesauce
1 cup of walnuts, chopped
2 teaspoons of vanilla extract
Powdered sugar for sprinkling on top.
Here's what you need to do:
Preheat oven to 350 degrees F.
Spray two 9 x 5 loaf pans with non-stick cooking spray. Set aside.
In a large bowl, combine the self-rising flour, sugar, brown sugar and cinnamon. Mix well.
Beat the eggs slightly.
To the flour, add the eggs, melted butter, bananas, pineapple, coconut, maraschino cherries, applesauce, nuts and vanilla.
Mix just until incorporated, do not over mix.
Pour into the prepared pans.
Place in the center of the preheated 350 degree oven and bake for 1 hour or until a toothpick inserted in the center comes out clean.
Cool on a wire rack for 10 minutes before removing from pans.
Cool for another 20 minutes, sprinkle with powdered sugar before serving.
