This green beans recipe is a staple in most country homes. It just doesn't get more comforting than Green Beans and New Potatoes.
I like to serve these with other vegetables fresh from the garden. If you are wondering how to cook green beans, this recipe is a family favorite.
Here's what you are going to need:
1 lb. of smoked ham, diced
2 Tablespoons of butter
1 lb. of fresh green beans, rinsed and stems removed
1 lb. of new potatoes, washed and quartered
1 onion, cut in half and sliced into 1/4" slices
4 cups of chicken broth
salt and pepper to taste
Here's what you need to do:
In a large heavy bottom dutch oven, combine the diced ham and butter.
Brown the ham over low heat.
Add the onions.
Cook until the onions are soft. Now, you're gonna see a lot of brown bits accumulating on the bottom of the pot but that's alright. It's gonna add wonderful flavor to your green beans.
Add the green beans and new potatoes.
Add the chicken broth. Now you can certainly use homemade chicken broth if you have some on hand.
Add some salt and pepper. I can't tell you how much because it will depend upon how salty your ham is and how mush pepper you like.
Bring to a boil, reduce heat, cover and simmer on low for about an hour or until the potatoes and green beans are tender. Be careful not to overcook because you don't want them to be mushy.
