Add some carrots, potatoes, and pearl onions to this crockpot roast beef recipe and you've got a wonderful pot roast.
If you decide to make it into a pot roast, you need to wait until the roast is about halfway done to add the vegetables so that they don't get too mushy.
Here's what you'll need:
1 (5 to 6 pound) chuck roast.
3 cloves garlic, cut in half
2 package Lipton Beefy Onion Soup Mix
2 cups Homemade Beef Broth or 1 can beef broth.
1/2 cup corn starch
1/2 cup COLD water
Here's what you need to do:
Cut 6 (1") slits in top of chuck roast about halfway through the roast. Place 1/2 clove of garlic into each slit.
Put roast in the bottom of the crock pot. Add beef broth. Sprinkle top with both packages of Lipton Beefy Onion Soup Mix.
Cover and cook on LOW 8-10 hours or until beef is fork tender. Remove Roast from Crock pot and set aside (Remember to let the roast rest for at least 10 minutes before cutting.) Do not remove the liquid from the crock pot.
Mix together the cornstarch and the COLD water until dissolved. Add to the liquid in the crock pot and stir. Replace lid and allow to cook until thickened stirring occasionally.
