This is the best chicken salad recipe! It's light yet bursting with flavor.
Here's what you are going to need:
1 whole rotisserie chicken
1/2 cup of diced celery
1/2 cup of dried cranberries
1/2 cup of fresh squeezed orange juice
1/2 cup of shaved almonds
1/2 cup of mayonnaise
salt and pepper to taste
Here's what you need to do:
In a small, microwave safe bowl, combine the dried cranberries and the orange juice.
Microwave on high for 1 minute. Set aside.
In a medium bowl, shred the chicken. Add the celery.
Add the cranberry mixture, almonds and mayonnaise.
Mix well. Add salt and pepper to taste.
One taste and I'm sure you'll agree that this is the best recipe for chicken salad that you've ever had!
