This sweet potato pie recipe is wonderful! It's not too sweet and will quickly becoming a Thanksgiving favorite! Try this as an delicious alternative to pumpkin pie.
Here's what you need to do:
Wrap sweet potatoes in foil. Poke with a fork in several places to allow for the steam to escape while baking. Bake in a preheated 400° F oven for 60 to 65 minutes until soft.
Lower oven temperature to 350° F. Prepare the pie crust or you can use a store bought pie crust.
Remove foil and use a fork to carefully remove the skins...it will be HOT.
Place the sweet potatoes and softened butter in a large mixing bowl.
Mix until smooth.
Add the sugar, brown sugar, eggs, milk, vanilla and spices.
Mix well.
Pour into prepared pie crust.
Smooth the filling.
Bake in the preheated 350° oven for 55 to 60 minutes. I hope you enjoy this wonderful southern favorite!
